It's almost the same for me. MacOS 10.13.6 Intel i5. Swedish.
"Ö", "j" and "åÅ" is missing. Some characters are replaced with a blank/space, and some with some strange character.
I also see a ' before MIDWEEK MEETING and WEEKEND MEETING.
@Dennis Thanks for sharing. But be reminded that this is a public site. Everybody can see the info you posted. You could take the picture down, or if necessary obscure personal info.

Here are two pictures with names blurred.
Both are from version 2021.01.0. The first picture shows correct information, but after changing week some characters are missing, completely or partly, as shown in the second picture.
I use iMac 27, late 2013 (i5 processor), macOS High Sierra (10.13.6).
Update:
It seems to be a font problem, at first view. If I switch to another user interface language, for example English, the error disappears.
If I change back, it comes back. I tested some other languages with ÅÄÖ, German, and it also had problems with these characters.
But it looks as the text areas are not rendered correctly, as part of the text is moved horisontally.
@Dennis, Yes, it does look like a font issue, but it only appears on Macs. When I change to Swedish on my Windows, nothing happens (well it switches to Swedish...)
BUT this is nowhere near the issue that the topic starter reported. See his picture.
Can you please tell me what happens if you print (try print to pdf, so you won't need any paper) and report what comes out. No need to publish, I am just interested in knowing if the characters come out well, since that is a different thing.

I'm seeing the same issue (Mac Mini M1 running 11.1). To answer your question Marc - the print versions generate fine, and the names in the speaker/student select dropdowns also show correctly.
The schedule info and speaker names *do* appear correctly when TB first opens, showing the current week. But as soon as I navigate away, everything is a mess. Even if I switch languages and back.

I first posted under this thread: https://www.theocbase.net/support-forum/post/7615-errore-visualizzazione-testo-su-software.html but this seems like the more appropriate forum category.
On first load the page looks fine. But navigating to another week causes the font to 'shift' so every letter on the Schedule page is cut in half vertically or overlaps another letter (so much that at first I thought it was a different language!). Even trying to change an assignment, thus popping open the side-bar, causes the font shift.
The only way to get it to show correctly again is to close the program and re-open it. (but of course, its only useful to view the current weeks schedule and not change anything...)
Please pass along our appreciation to the brothers working hard on these things!

See picture. It's the same as before. The text at the microphone should be "Offentligt föredrag". It looked perfect att launch of the program, but starts to distort when changing week. After some week changes it looks like the attched picture.
